When I got home on Thursday afternoon I knew that Savannah, Denielle, and I were going out to dinner but I needed a little something. I reeeeally wanted something sweet like cookies! I didn't want to use up all my calories before we even got to the restaurant so I visited one of my favorite blogs Fatfree Vegan Kitchen. I used her recipe for Banana-Maple Oatmeal Cookies which was perfect. Instead of egg replacer she recommended a tsp. of ground chia seeds and 2 Tbsp of water. It gets all jelloy!The dry ingredients:
My brother gave me an ice cream scooper that doubles as a cookie dough scooper that gets the perfect size every time. I had to be sure to flatten each cookie with a spoon
Dinner was amazing! We went to an Italian restaurant downtown.
I even got rice pasta. Gluten Free!
