I am up early for my voice lesson! I decided that I would put those suuuper ripe bananas to good use and make Banana Bread! I started by mashing them (2).I whipped
- 1/2 cup vegan butter and
- 1 cup evaporated cane juice in my electric mixer.
- the equivalent of two eggs of egg replacer (pictured below)
- 1 tsp vanilla
- 2 Tbsp. vegan sour cream
- 1/2 cup hazelnut milk
Lastly I added
I poured it all into this loaf pan and put it into the oven at 350 F. The recipe said 30 minutes but so far I've had it in for at least 45 going on 55. I will have the exact timing in my next post.
- 1 1/2 cup whole wheat flour
- the mashed bananas
For breakfast I had the last of my blueberry pecan granola with blackberries, strawberries, and hazelnut milk. Delicious!
I'm sure the anticipation of my big surprise is killing you so I will tell you already!.... Tonight we are having.... A Murder Mystery Party!!! I am so excited! It's old western themed so were are going to make Fajitas! Amanda and I are going to do the food shopping today so you can expected some pretty exciting food coming up!
