The Rest of Tuesday

Lunch
I came home for lunch and made a tasty looking spread. I used a frozen veggie burger from Amy's frozen foods. It was the texas BBQ Flavor? I toasted the bread and spread one side with hummus and the other with guacamole and mustard. Then I topped the patty with tomato and mushrooms.
On the side I made a beautiful fruit salad of apple, strawberries, blackberries, and kiwi.
I had some Naked superfood green juice on the side. What a good looking lunch!
Before heading back to campus I enjoyed a mug of Blueberry Pecan Granola with vanilla almond milk.

Snack
I ate this Honey Graham Z Bar during the break at choir. Hit the spot!

Dinner
I realized when I got home that I am running out of fresh green things in my life. I was also not feeling very well so I decided to make something comforting that always hits the spot: pasta.
I made what ended up being more like a chili than a pasta sauce to top my angel hair. I used
  • 1 can stewed tomatoes
  • about 1 tsp. minced garlic
  • about 1/2 cup grilled mushrooms
  • left over taco 'meat' (which inluded soychorizo, kidney beans, pinto beans, and taco seasoning)
I topped the whole thing with a little vegan parmesan and salt and pepper.
I wasn't as satisfied with this creation as I'd hopped I'd be but at least it gave me some protien and some veggies.

Dessert
Dessert, on the other hand, was fantastic! I made banana ice cream the usual way but when it started to become creamy and ice cream-like, I added strawberries and chocolate chips!!
It was amazing!
Sorry my posts have been so out of whack lately with the dates. I have been working my butt off and my whole day is filled with one thing after another. But I'm still taking pictures and I'm still keeping track! I miss blogging on time :( When the opera is over and my recital and midterms....Soon, blogworld, soon!

Orchestra and BJ's Dinner

Dinner
Later, I met my friend Connor who I haven't seen in ages. I went to his orchestra concert and ran into a bunch of old friends there. It's always nice to see people when it's been so long! Afterwards we went to BJ's for dinner. I got a house salad with balsamic vinaigrette. Sorry the quality of these photos is so poor, they are from my phone cause I definitely forgot my camera!
For my entree I got pasta with fresh tomatoes and spices.
BJ's never fails to satisfy!

Student Appreciation Day!

Snack
After Theory I snacked on 30 grams of nuts. I love NUTS! They have so much flavor and each one is different. I think of this bunch the macadamias were my favorite.
I was still feeling a little hungry when I got to Anthropology I snapped a photo of this Z bar before class started. I've totally gotten over being self-conscious about taking pictures of my food.... except when I'm sitting in the back corner of a low lit classroom full of people.. I think the flash might be a little distracting!
Chocolate Chip! Never fails to satisfy. I think it has to do with the chocolate chips that are dispersed through every bite.

Lunch
Today was Student Appreciation Day at work!! I love this day! Once every quarter the supervisors bring homemade goodies to the work room and keep the table stocked the entire day just to show appreciation for the student employees. It's the most amazing day ever! Everything is always so tasty and there are usually a decent amount of vegan conscious dishes which I appreciate haha.
I chose a light and tangy salad and corn and bean salsa with a glob of guacamole on top.
And a bunch of grapes which I continued to eat out of the bowl once these were gone from my plate!
I used this chip to help scoop my food onto my fork so when I was done I just ate it with a little salsa.
This chex-mix was taunting me all afternoon! I was wary of the chocolate chips because I learned recently that even dark chocolate can sometimes have milk in it.
But I had a stroke of genius and decided to put the mix into my yogurt, sans chocolate. It was quite a tasty idea if I do say so myself.
I busted out my little pack of carrots but I could only eat half the amount. I was getting carroted out.
Last but certainly not least, I taste tested a gluten free oatmeal cookie courtesy of Kelsey! She kept telling me they were too dry but I really enjoyed this little cookie! I knew it was gluten free going into so I wasn't expecting the same caky version I made a while back. Kelsey also added chocolate chips, and dried cranberries. I thought they were fantastic! They even had a sweet and salty thing going on which I was diggin.
Once my shift was over I came back down for seconds! I chose the same salads, laid out the rest of my carrots, and sliced up my apple.

Dinner
After making photocopies at the library and a practice sesh in my practice room, I came home and made a veggie packed dinner. I used
  • 1 serving angel hair pasta
  • about 1/2 cup sliced and quartered zucchini
  • sliced scallion (less than 1/2 Tbs.)
  • sliced mushrooms (less than 1/4 cup)
  • 1 tsp. cilantro pesto
  • 1 tsp. olive paste
  • salt and pepper to taste
This came out so delicious! It could have used a little more of the pesto and the olive paste but I added a little more salt instead.
I served myself some hummus and a crostini on the side for some protein.
I went back for another crostini cause I wanted more hummus, I mean protein!


Dessert
For dessert I just wanted something creamy with blueberries and chocolate. After five minutes of collective brainstorming with Kelsey, we discovered another berry pudding in the fridge! I added blueberries and chocolate chips on top.
It was exactly what I wanted!!
For some reason the photo didn't show up here but a little while later I was still not feeling full (a theme of the day apparently) so I had half a banana with a scoop of peanut butter to quite the hunger.
Later while doing some homework my stomach was feeling really unsettled. I heard that ginger is supposed to help with this kind of thing so purely for medicinal purposes I had two pieces of crystalized ginger.
After that I just put myself to bed because I wanted to be fully rested for the big audition!

Snacks, Carrots, and Cookies.

Lunch

I packed myself this lunch and a chai tea to go with soy milk.
I made it to campus early like I wanted! I practiced for an hour before class and had my lunch afterwards. I had it cold this time and it wasn't as good but still alright.
Yogurt is so tasty!
Kiwi!
I was going to save this for later but I just really wanted it. Mojo bar!

Snack

After my voice lesson I had to rush to the ENT. I munched on these carrots and peas on my way.
My appointment went really well and afterwards I went to Costco! I just really wanted some free samples. I sampled this Acai juice.
I was so hungry after browsing all the delicious Costco food that I just couldn't wait. I grabbed an individually packed baggy of carrots and hummus!
Ahhh so good!
I also bought a big box of these Clif Z Bars. This is the chocolate brownie flavor.
It was so chocolaty!

Dinner

When I got home I decided to make cilantro pesto. I got the recipe from the Whole Foods app on my iPhone. First I toasted some pine nuts and pecans.
This vegan parmesan is gluten free and makes life easier when you're making pesto.
  • 2 cloves garlic
  • 3/4 cup cilantro
  • toasted pine nuts and pecans
  • 1/2 tsp. ume plum vinegar
  • 1 tsp olive oil
  • generous shake vegan parmesan
  • salt
Voila! It came out perfect!
I cooked up these mushrooms using a little water.
This salad is courtesy of Savannah! She didn't want it anymore so I happily took it off her hands.
Dessert

I am on a sweet kick or something tonight. I just can't seem to turn off my sweet tooth! I started with a berry pudding...
Then I added a cookie!

Or two.... (or three?? oh no!)
I guess tonight was cookie Thursday or something. I have a really long day tomorrow:
  • 9AM-11 cover shift for Daniel
  • 11-11:50 20th Century Analysis
  • 12-12:50 Anthropology
  • 1-2 Studio
  • 2-4 Work
  • 7PM call for Choir Concert
  • 8PM Concert begins
  • 10PM Choir Party!
At least I'll have some time to eat dinner at home but I will barely have time to breathe tomorrow during the day! I better go to bed immediately if I expect to be functioning during all of this.

I hope your Friday rolls around a little less jam packed! All I know is Saturday is going to be as restful as possible and will include exercise of choice, laundry, nail painting, and possibly a movie!
Night!
