Easy on the Tummy

Breakfast
I am still trying to take it easy on my system since I wasn't feeling too well last night so for breakfast I went simple. I made plain oats with
  • 1/3 cup oats
  • 2/3 cup water
  • 1/2 banana
Topped it all with
  • 1/3 cup vanilla soy yogurt
  • sliced strawberries
  • other half of the banana
I also had some peppermint tea. It looks like this is just a bowl of fruit and yogurt.
To prove there really are oats in there I mixed it all up.
I woke up pretty early this morning, probably because I'm anxious since it's recital weekend! Savannah's is tonight at six and mine is tomorrow night at six. woohoo! A little while later while vegging on the couch hunger struck again so I heated up a cornbread muffin and had it with vegan butter and boysenberry jam. yum! ...I may or may not have had a second one.
Nothin's more satisfying than butter and jam!
My parents land at 1 today and have about a 2 hr. drive till they get to Santa Barbara. I am so excited to see them!

Hope your weekend is going well!

It's Not Hard When All You Eat Are Veggies

Lunch
After class I decided to run downtown to Macy's to pick up my recital dress (I did pre-sale, saved 30 bucks!). I also hit Trader Joe's on the way back which did pretty quickly but still only left me 20 minutes to prepare and scarf down my lunch! I hate rushing when I eat :( My salad was
  • baby lettuce mix
  • snow peas
  • tomato
  • beets
  • mushroom soup rice with kidney beans
  • carrot sticks
  • celery
  • TJ's roasted tomato salsa
  • TJ's Eggplant Hummus
The eggplant hummus is only 35 calories for 2 Tbsp. Um, hellooooo hummus!

Snack
After work I went for this Coconut Cream Pie Lärabar. I was walking to choir when I took this shot.Man these things are like dessert! Now I remember by the Coconut Cream Pie is one of my favorites.

Dinner
For dinner I decided, even though I was pretty hungry, to put the time in and cook. I was inspired by Tina's salad the other day which had roasted sweet potato chips. I sliced one sweet potato into discs, laid them on a baking tray which I sprayed with cooking oil, and baked them for 20 min at 350F.
Then I got to work making some cornbread! Somehow I ended up with two bags of cornmeal. Figured I may as well use them up! I got my recipe from Fatree Vegan Kitchen and used her recipe for Confetti Cornbread minus the confetti (bell peppers and corn). I also used gluten free baking mix because that's what I had! I am definitely sharing these with Miz Kelsey, my gluten free, roomie. Here's the drys,
and the wets. I combined the two and poured the batter into 11 individual muffin tins. They baked for 20 minutes at 400F.
Voila! Dinner is served! Roasted sweet potatoes, roasted broccoli, mushroom soup rice with kidney beans, cornbread muffin with expertly measured out vegan buttery spread, yellow mustard, and eggplant hummus. What more could a vegan ask for!?!?
Not to toot my own horn, but when I try, I can really whip out a tasty dinner! I guess it's not hard when all you eat are veggies :)

Dessert
I was thoroughly enjoying myself while I ate dinner with an episode of Six Feet Under that I didn't want it to end. I decided to watch the last episode of season 1 with a fruity dessert. Here we have
  • scoop of my homemade Strawberry Lemonade Sorbet
  • frozen mango from trader joe's
  • frozen blueberries also from TJ
  • Kelsey's raw coconut cashew cookie bar.

There really is sorbet in there, I promise!
See, there it is!
By the time I finished season 1, it was bed time. I missed last nights post but I knew you would understand that sleep was more important! Hope you had a good night too!

A Last Minute Decision

Wow I have soooo much to catch up on! I'm going to have to make this brief though, I'm on a time limit here! So yesterday I met up with a friend and we had Jamba Juice. This is the pomegranate flavor and it was soooo good :)
For lunch I used some of the pita that Kelsey gave me after her gluten discovery. I made my own sauce out of tahini with just a Tbsp. of tahini, yellow mustard, salt, pepper, paprika, and water. Perfecto! In the pita was the sauce, yellow onion, roast turkey flavor artificial meat, bean sprouts, and spinach. Baby carrots on the side!
This was the perfect consistency. I added water little by little to get it just right.
Tapatio was the perfect addition!
for a little sweet treat I mixed strawberry jam in some plain soy yogurt.
It tastes like cheesecake or something!
For dinner I had some of the while bean chili/stew and cornbread. I just love this meal!!
We were studying for out 20th century music theory class when Kelsey encouraged me to try her gluten free cake creation! I know I said I wasn't going to have sweets but I only had this one piece and I felt like the whole day was a success. I'm getting better!
So now we are finally at today. This was breakfast: soy yogurt, strawberry jam, peanut butter, mixed berries, fresh banana slices, and of course two gummy vites. So tasty! I was running around like a crazy person this morning doing laundry and getting ready because...last night on a last minute impulse I decided to go with Kelsey and a group of her buddies to June Mountain to go snowboarding! This is crazy! I'm really excited to actually do something cool on my three day weekend. I'm definitely not a snowboarder however, much more of a skier...but I'm prepared to fall and just try to have as much fun as I can. Isn't that what I should be doing on Valentine's day? haha.

After the midterm which made my brains hurt a little I went to studio while eating this PB&J on the go. Smashed PB&Js are the best.
Baby carrots of course! I ate a few of these before work...more like scarfed actually!
After work I was huuuuugry so I ate this mountain mix bar on while I was on my bike. I just savvy like that. haha. I stopped at the Coop to stock up on a few essentials for the trip. Kelsey and I were surely the only ones with dietary "complications" and knew we'd need to come prepared.
At home I finished off my baby carrots while I packed up to go to the mountains!
Here's the loot! Chips made of carrots and sweet potatoes with roasted garlic and olive hummus, fresh mushrooms and zucchini to cook with some rice pasta, gourmet drinking chocolate, onions, bananas, soy milk, peanut butter, and strawberry jam. Not pictured was the last couple slices of my loaf of honey wheat bread.
My Daddy sent me flowers for Valentine's Day!!! He is the sweetest person in the world and he knows how to treat his girls! I don't think I've ever even seen purple roses before! I called him to thank him and he pretended like he had no idea hahaha. It's true what they say about girls and their Dads...I gotta have one just like him :)
Actually there's a little picture of my mom and dad in the back!
I didn't want to be hungry on the road since it was going to be a 7 hour drive so I filled up on white bean chili and the last slice of cornbread. Oh, how I miss you already!
I small handful of chocolate covered blueberries to seal the deal and I was ready to go!
I'm sorry I've been MIA for so long! It's been pretty hectic around here and worst of all.... I can't find my camera with all the pictures of the trip!!! Argh!!!

I promise to post everything as soon as I can!

Thursday is So the Time to Get Pumped!

Before choir Savannah and I got some tea. I brought a bag of throat coat from home (yesss ten points for being prepared!). I ate my carrots while we sat and gossiped.
I didn't sing last night in choir but instead just sat and followed along with my music. At break time I had this Peanut butter pretzel Mojo Bar.
After the audition (which was after choir and the reason I was saving what's left of my poor voice) I came home and heated up some dinner. Chili/ Stew, corn bread, butta and honey! The chili is even better the next night I think and it's gotten spicier and more chili like.
There was barely anything left of my chocolate coconut milk ice cream so I filled 'er up with granola and frozen berries. ...I have a serious sweet tooth problem and I think it's specifically a night time thing. I'm starting to get really frustrated with myself for messing up my whole day with sweets at night. I declare right here and now that tonight I will not have a dessert simply to prove to myself that I don't need one! That doesn't mean I won't have a little something sweet during the day maybe but tonight, I don't need to go over board and have three mugs of granola....gah!
This morning I let myself sleep in till 8:30. I'm having my allergies retested in less than a week which means that I'm not supposed to take anything with antihistamines in it. No big right? Yeah, unless you're me lol. It's annoying right now to be back in sneeze-face-ville but if it means getting my allergies figured out for good, it's a small price to pay! Anyways, I made a rather tasty breakfast this morning if I do say so myself. These are some veggie protein patties I picked up the other day.
I love this chicken spice! Again, no worries, it's totally chicken free. I just really like the combination of spices. I sprayed the pan lightly with cooking oil and cooked two of these little patties till they browned.
I heated up some frozen berries for just 45 seconds and made a fruit salad with banananananana. It's a coffee morning today. VIA medium roast, squirt of agave, regular soy milk: perfect! Oh, and gummy vites of course!
On the bread I spread a thin layer of tahini and sprinkled it with salt pepper and paprika. Simple is GOOD.
That rating on the sausages, by the way,...they taste like artificial meat which is sort of unavoidable but with the right spices and the combination of the bread and tahini they are pretty tasty. I'd recommend them to other Vegos but not to meat eaters....they'd be like, 'what is this???'

Boy, I am sore! Alex and Aaron worked me out gooood yesterday! My obliques are especially 'engaged' now in every movement I make lol. I love it though, feeling sore the next day is like your body saying, "Raaawwrr!! I worked outt rawwwrraaww!" Obviously working out turns you into a ware-wolf hahaha...

People it's Thursday!! Do you know what that means? 3 important things: It's voice lesson day, it's only one more day till Friday and Shabbos, and then the weekend!!! And this weekend is going to be bomb because it's a three day weekend!

So basically, get pumped!
