It's Good to Be Vegan

Good morning blog world!! I am a little behind but am ready to catch up. Yesterday was that last studio meeting before spring break and this Z bar really came to my rescue....
Because my voice teacher bought all these pastries!!!!
They all looked so delicious but I knew none of them were vegan :(
Yay for Z bar! It's moments like these that it actually pays to be a vegan, I avoided so much butter and sugar!
I figured I may as well dig into my other snacks so I ate my carrots....
and my apple!

Dinner
I just haven't been in the mood to cook big fancy meals lately so using the George Forman grill was fast and easy. I went simple with this sandwich
  • eggplant burger
  • hummus
  • avocado
  • chicken seasoning
  • paprika
  • yellow mustard
  • spinach
Yum!!
And now for a little wine!! Savannah and I relaxed and had a glass of wine to ring in the weekend after such a stressful week!
I had a little dessert too!
I don't know why but I was just craving more hummus so I went back for more... I was watching a really good episode of Criminal Minds. ahh, TV munchies, I need more control over you!

Now to today. I went on a run this morning which just needed to happen, it's been too long that I've been putting exercise on the back burner. I also just downloaded a new app on my phone called iMapMyRun. It keeps track of distance and pace for free woohoo! My times aren't that great yet so I'm not ready to post them right now... I will just have to keep it up!

Breakfast
For breakfast I made a vanilla frappacino. For some reason I just couldn't get the balance right this morning. Too much ice? Too much milk? I dunno but it still tasted good.
I made some faaancy oats this morning! in the mix
  • 1 small sliced banana
  • 4 canned pear slices
  • handful raisins
  • 1/2 cup oats
  • 1 cup water
  • 1 tsp. chia seeds
  • 1 tsp. milled flaxseed
  • 2 tsp. brown sugar
There's something about using pears that must release extra liquid because the raisins plump up so much it's like they explode! I topped my oats with blueberries and coconut!
Ice coffee, oats, and a women's once a day.
Now I have a paper to work on and a lunch to concoct!

Sometimes You Just Need to Sit in the Grass.

In anthropology I enjoyed this little clementine. I adjusted this picture because it was really dark which is why it looks sort of funny.
After class I just needed to sit in the sun and chill out for a little so I found a grassy area and ate my Peanut Butter Pretzel Clif Bar.
I sat in front of the music building by this tree.
Prime real-estate for people watching.
I practiced a little and then made my way to the gym. I ran for a little under 30 min and covered about 2.38 miles. I felt good about it. I did some light ab exercises and headed home.

Late lunch was awesome! I used my roomie Savannah's George Forman Grill to make a panini of sorts. I used a frozen eggplant patty and grilled it first with some onions. Then I smothered one of the bread slices with hempseed hummus and mustard, layered on cucumbers, and sprinkled it with spices. I grilled the whole thing and tada! For a drink I blended up a cup of frozen berries, half a cup of soy milk, a squirt of agave and a whole home grown orange from Alex and Dena's house. Served with snow peas and carrots. Perfect!

All Sunny and Nice Out

Lunch! I went straight to the gym after class and did a quickie workout: 20 minutes on the eliptical strider machine (or something) and some abs on the mat. After I stopped at the Co-op which has everything a vegan girl could want.
I decided to make a sandwich with an eggplant burger patty. I love this chicken seasoning (no worries, no actual chicken involved). I used it when I cooked the patty.
I also tried Almond Pepper Jack cheese which I've never had before. Verdict: it's awesome! good texture, good flavor, even melted a little. yay!
I also picked up some throat coat because my throat is not happy today.
Rockin sandwich, throat coat, and the rest of my cranberry juice. Perfect lunch!
The sandwich needed something red like tomatoes but Tapatio was close enough.
Dark chocolate covered blueberries!!!! 1/4 cup is 190 calories, I am in heaven!
I think I really am affected by the weather. It's all sunny and nice out and today I feel all sunny and nice. I love the rain but I think I can only handle a few days before I turn into a stress bucket like last week. I loose my motivation.
