No Glitches In My Gears

After classes I had an hour and 35 minute break before I had to head over to work. I opened a brand new box of Peppermint tea, woohoo! I love minty flavored tea.

Snack
Before I left for work I opened this bag of Food Should Taste Good sweet potato chips. These are deadly good. Sweet but not too sweet and with the perfect amount of saltiness.
I had a couple with some roasted tomato salsa.
Then I had a few pieces of candied ginger just for a little something sweet and headed out to work.

Dinner
Work went by really fast but I came home with a fierce appetite! I heated up some of the vegan chili from last night and mixed in some quinoa I had already cooked. Topped it with some roasted tomato salsa and garlic chili cholula, sweet potato chips on the side.
I am currently plugging my way through the reading for my Religious Studies class. It's not difficult reading but I sometimes get in the bad habit of reading with words in my mind while at the same time zoning out and completely failing to internalize what is actually being said. I have to pay attention while I read, otherwise, what's the point!

My motivational snack/dessert is an Orville Redenbacher mini bag of kettle corn. Only 100 calories in one popped bag, whoopie.
Today was a good day for me and I hope it was for you too. There was nothing exceptionally exciting that went on but there were very few glitches in the gears so to speak. That's a good day in my book.

Staying on Top of It!

Breakfast
For breakfast this morning I whipped up my usual batch of banana oats. My bananas are getting suuuper ripe which is just how I like them! In the mix
  • 1 large, very ripe banana
  • handful raisins
  • 1/2 cup oats
  • 1 cup water
  • 1 tsp. chia seeds
  • 1 tsp. flax seeds
  • 1 scoop peanut butter
A mug of green tea and a Women's Once a Day on the side as usual.
I ended up topping my oats with some vanilla almond milk because they were piping hot.

Today is a beautiful day and I have a lot to do. My goal/motto for today is: stay on top of it! I have a little schedule drawn up for today and I'm hoping I can really stick to it. I mentioned that I wasn't feeling well at all yesterday and I ended up going to sleep at ten! I feel better today and I'm hoping it lasts.

I'm about to kick of the day so wish me luck!

Baked Banana Oatmeal Courtesy of Tina

Breakfast
Good morning! Mission accomplished last night, I got some quality rest! I still woke up feeling tired though and strangely, I just didn't feel like having oatmeal for breakfast. I needed to do something different so I went to my all time favorite blog Carrots 'N' Cake and found a recipe for Baked Banana Oatmeal. It was perfect! I combined all the ingredients in this bowl. It called for walnut pieces but I used pecans cause that's what I have. It also called for almond milk but I ran out last night. Darn!
While I whipped everything up I sipped on this mug of peppermint tea.
Why have I never cut a banana like this before?!?

After! 30 minutes in the oven at 350 did the trick.
It looks just like Tina's!!
I made sure to take my Women's Once a Day too. It was pretty darn tasty. Good thing this makes two servings, I'm going to look forward to that second one!
Lunch
Here's the lunch crew:
It's going to be a long day and I'm basically stuck on campus until 8PM :( so I thought I would put lunch up in advance.
I have my first lesson of the quarter today and I'm anxious to see how it goes! I probably won't get to post until later tonight, ugh!

Cookie Pie!

Dessert

After dinner Savannah constructed one of her famous Cookie Pies out of our oatmeal cookie dough! The refrigerated dough did not want to stay together but she somehow managed to smash it into a mountainous cookie.
We split this sucker in half. Doesn't that just look seriously chocolaty and good?
I enjoyed my half with a mug of peppermint tea while watching an episode of Intervention, one of my favs. ...There may or may not have been a few sneaky bites of cookie dough. I need a cookie dough intervention!!
I am just exhausted today! My eye had been twitching all day and I read up on it that it could be stress or fatigue related. I didn't mention it before but in between my lunch burrito and yogurt parfait, I came home and took a nap, something a rarely ever do! I just wanted this weird feeling like I needed to close my eyes to go away so I closed my eyes for a substantial amount of time hoping that'd do the trick. I felt a little better but I think tonight I really need to hit the sack early and rack up at least seven hours of quality zzz's.

It looks like this nice weather is going to continue so at least I have some sunshine to look forward to through this stressful week. This is the last week of classes before finals week!!!

I'm thinkin pumpkin oats for tomorrow morning...but you never may know!
