Lunch at Home is Always Good

Lunch
For lunch I made a tasty sandwich with
  • yellow mustard
  • romaine lettuce
  • sprouts
  • grilled red bell pepper
  • tomato
  • onion
  • cilantro
  • a little hummus
  • salt and pepper
Sliced kiwi, carrots, sugar snap peas, and hummus on the side. And the rest of this diet iced tea for a drink.
A little while later I throughly enjoyed a bowl of my favorite cereal. I really need to get over this stuff!
Opera rehearsal at three, work at six, no rest for the wicked!
Hopefully I will get a chance to practice my italian pieces later today!

Taco Time With Aaron

Snack
A while into my reading I grabbed a kiwi to munch on.
Already getting back into the old routine, I had a chocolate chip Z Bar during the choir break.

Dinner
Aaron and I decided to go in together on dinner which is always a good thing. Plus we had some catching up to do! We began with a starter of chips and salsa!
This salsa was super tasty. Too bad Aaron took it with him!
We decided to make tacos so I went out on a limb and purchased a fake meat I have never tried before. It looked promising and was perfect for this particular occasion so I had high hopes.
Aaron was in charge of the 'meat'. He sauteed onions in a little olive oil and added the fake meat. Then he added kidney and pinto beans, and a little chili powder. It came out perfect! The meat had the flavor of beefy taco meat!
While Aaron cooked up the meat I was in charge of making the guacamole and slicing up the add ins for the tacos. To the guac I added:
  • a little finely chopped red bell pepper
  • finely chopped white onion
  • finely chopped cilantro
  • 1 and 1/2 super ripe avocados
  • 1 finely diced tomato
  • salt
  • a tiny amount of cayenne
It came out delicious. The only thing I wished I could have added was fresh lime. That would've been perfect!
For the toppings we had:
  • shredded lettuce
  • homemade guacamole
  • salsa
  • sauteed red bell peppers
  • Tapatio
  • and cheese for the non vegan
Soooo tasty! I ended up having two of these babies and now I am reeeeally full!
This is Aaron's taco for proof that even non-vegans can enjoy fake taco meat. I would definitely by Soyrizo again. It was fantastic.
I am super tired! I cannot wait to lay down in my bed and sleeeeeep! Tomorrow is going to be a longer day on campus so I want to be rested. I keep catching myself wishing I could just go back to spring break but I know if I don't start this quarter with a fire under my butt I will have a heck of a time getting re-motivated. I'm going to to my best to stay on top of things...I even vacuumed the floor today!!?! Weird!

Outside Lunches are Finally Coming Back

Lunch

It really is a beautiful day out today so I sat in the sun and enjoyed my little lunch. Kiwi sliced up, baby carrots, apple slice up, and a peanut butter pretzel Mojo Clif bar.
I just needed to show how tasty these bars are. There were so many little peanut butter chips on this one, woohoo!
After lunch I whipped out a piece of my favorite gum: Five: Flare (cinnamon).
I'm blogging from the library ooo! I have choral conducting in thirty minutes so I think I'll go practice a little.

My eyeball is still twitching :( I have been trying to have less caffeine lately by having chai tea instead of coffee in the morning...I hope this twitch isn't related! It makes me want to just close my eyes and go to sleep (like I did yesterday) but I can't do that, there's too much to do! I may cave and have some coffee just to see if it makes any difference.

Off to the practice room!

Homemade Granola- Gone Already!

Massive catch-up!! I guess with finals and everything catch-ups are to be expected this week.

Breakfast

Homemade granola, banoonoos, blueberries, and the last of my starbucks.
I am obsessed with with blueberries and this granola!
Seconds!

Lunch

Savannah and I went on a crazy apartment hunt that afternoon before I had work. I made myself a quick lunch before work when we suddenly stumbled upon another apartment option! Pretend the hummus isn't even in this picture because I barely got one scoop before we zoomed out of the house!

Snack

30 grams of nuts is not that much but nuts are just so satisfying!!
I also treated myself to three of these crystallized ginger pieces. The texture of these are really satisfying. I just can't eat them too quickly because they start to get really spicy!
In the car on the drive to the choir concert I ate a chocolate chip Z bar.
So chocolaty!

Dinner

After the choir concert the girls and I stopped at Freebirds! It's a very popular, 24/7 burrito place. I pulled a Tina when I got home. I split my burrito and put it in a container for lunch before I even took a bite!
It was ahhhhmazing!

Breakfast

Finally at today! For breakfast this morning I made a chai tea with sugar free vanilla syrup and homemade granola with bananas and blueberries. And of course a Women's Once a Day!
I am really feeling this sugar free vanilla syrup. It's so powerful I don't even need that much!
I really loaded on the blueberries. I love 'em!
Yuuuum!

Lunch

I had the other half of my burrito for lunch today. I heated it up for about a minute and took it to eat outside. It was so beautiful today!

Snack

For a snack later that afternoon I made a parfait. I layered cherry soy yogurt, granola, and blueberries, then repeat. So good!
I decided to just finish off the granola and piled on the blueberries!

Dinner

For dinner tonight I made a grilled sandwich with
  • Eggplant burger
  • mushrooms
  • scallions
  • red bell peppers
  • spinach
  • cilantro
  • hummus
  • avocado
With sliced kiwi on the side!
So tasty!
I feel a dessert post in my future!!!

Santa Barbara Museum of Natural History

The Museum was great. It is in a really beautiful location downtown and the displays were really nice. Doesn't this one look realistic?
Acorns are an important part of subsistence!
I never gave much thought to the basket weaving tradition but when you see these baskets up close they're incredible! I can imagine ever making something like that!
I was way too excited when I saw a basket full of chia seeds on display!
After the museum I made it to campus with time to spare so I treated myself to a little coffee. I got a medium drip coffee with a shot of sugar-free hazelnut syrup. I started with this French Roast but it ran out!
Not a problem since they had Carmel Nut Fudge!!
Hazelnut coffee makes me think of my Daddy :) We always have it at home.

Lunch

During my lunch break at work I enjoyed my salad which was a mix of:
  • red leaf lettuce
  • mixed olives
  • red bell peppers
  • avocado
  • cherry tomatoes
  • cilantro
  • mushrooms
  • cucumber
I love this flavor! It reminds me of the yogurt that comes with the sprinkles that I used to eat when I was little.
And an amazing Oatmeal Raisin Chocolate Chip Almond Cookie!
Jealous yet?
Snack

When I got home from work I snacked on this kiwi.

Dinner

I decided to eat a dinner like meal even though it was early. The choir dress rehearsal was tonight and I didn't want to be hungry. This is a repeat of last night only smaller.
Covered in salad after I nuked it!
