Midnight Snack, Rain Outside- Creamy Oats Inside

Midnight Snack

Talk about a midnight snack! After Shabbos I hung out with some friends who were also at dinner. It was raining and we walked from dinner to another friends house with trash bags on like crazy people! When I finally got home I had the last Skinny Figgy Bar and it was sooo good!

I had it with a mug of mint tea.

Breakfast

For breakfast this morning I whipped up some especially creamy banana oats. In the mix:
  • 1 cup water
  • 1/4 cup raisins
  • 1 sliced banana
  • 1/2 cup oats
  • 1 tsp. milled flaxseed
  • 1 tsp. chia seeds
  • shake cinnamon
  • splash cinnamon
  • drizzle of maple syrup
  • scoop peanut butter
I took the extra time this morning to really whip the oats and stir them constantly. It made a big difference because my oats came out much more creamy!


How is it sunny out and yet it's raining? Baah!
Now, I'm procrastinating the cleaning and homework I have to do by watching "Corina, Corina" on TBS With Whoopi Goldberg and Ray Liotta. It's so sweet! Wow, it just started pouring even harder!! I love the sound of rain :)

Hopefully Kelsey and I will be making a trip to the gym later, in a car of course.

Could've Been Better...

Lunch

I was huuuungry on campus today but I planned to stay until after my voice lesson and that's what I did. I had a Mountain Mix Clif bar while I worked on some music.
I love these things.
After my voice lesson and some running around I treated myself to an Acai Antioxidant smoothie from Jamba Juice.
Dinner

For dinner I made a big salad with
  • cherry tomates
  • cucumbers
  • avocado
  • mixed olives
  • mushrooms
  • cilantro
  • scallions
  • salt and pepper
Also a slice of of the Pumpkin and Black Bean Casserole.
For dessert I had a slice of Skinny Figgy Bar!
I was doing good until I relaxed a little too much and decided I was still hungry... Savannah and I went to a New Composers concert to hear some contemporary music and I brought 3 pieces of crystallized ginger and about four chocolate covered blueberries as a performance snack. When I got home I just needed some granola apparently!
I really didn't need to eat as much as I did tonight and I am embarrassed and disappointed but all I can do is better next time. It could've been worse I guess :(

Tomorrow is a long day but at least it's FRIDAY!!

Cooking/ Retail Therapy

After class I highly overestimated the amount of time I had before my allergy appointment. I didn't have time to make my food look all pretty and actually I ended up only getting in a few bites of everything before rushing out the door!
I did manage to grab one of these Zbars! I don't know if it was the song playing on the radio or what but this bar tasted especially good and cookie like. I was feelin it.
I love this gum!!
The allergy appointment was successful...as in I definitely have allergies! I will start taking shots as soon as I can and hopefully I will be in top shape for my recital in May!

I was feeling pretty empty so before I went out to fill prescriptions and run some errands I made a PB&J.

I think I'm in love....with Whole Foods!!! This was my last stop and omg...I just love this place. I got a Chai Latte with almond milk which hit the spot while I shopped.
So creamy!!
I finally went to Bed Bath and Beyond and got the Citrus Juicer yay!!! This should hopefully be making an official appearance soon.
So Kelsey and I decided to go in together on a casserole and a dessert. Both recipes are from Fatfree Vegan Kitchen. I love this blog! I'm going to have to comment and let her know. We used the recipe for Pumpkin and Black Bean Casserole but we used a Kabocha squash.

The sauce.
While the casserole baked we made Skinny Figgy Bars which also came from Susan V's blog. I could tell these things were going to be bomb!
That casserole came out great!
For dinner I served myself a salad with scallions, mushrooms, cherry tomatoes, avocado, salt, pepper, and vinegar. And of course some casserole!

It needed a little something so I added some of the bruschetta that I just bought from whole foods.
So fresh and tasty!
I may have had seconds....
I frosted the figgy bars as decoratively as possible.
And served myself up a piece!
I only had one... I just couldn't choose one shot.
It's way past my bed time now blaaa. Good night blog world see you in the morning!!
