Plum Cobbler!

Bloggies, I fell behind yesterday and didn't get a chance to blog at all. I was working and reading non-stop! Here's the recap:

Breakfast
I started my morning with a mug of Honey Lemon Ginsing Green Tea. This tea is really flavorful and, not that I usually do anyway, but doesn't need any sweetening.
I cut up and gobbled this grapefruit. When grapefruits are good, they are so good! This one was particularly juicy and sweet.
30 minutes or more later I made a quick bowl of Coach's Oats, steel cut oats that cook faster than regular. I sweetened with a little honey just for something different.


Lunch
After class I came home and decided to have some of these lovely looking cherries.
Cherries make reading sweeter.
30 minutes later I had an 'appetizer' of Food Should Taste Good multigrain and sweet potato chips with some garlic lover's salsa. yum!
I reheated a bowl of vegan chili and enjoyed a hot lunch.

Snack
I headed back to campus for my two other classes and instead of going home again afterwards decided to stay on campus, getting a little reading done, and get a Jamba Juice with the gift card my mom gave me! I went for peach perfection and took it down to the pond.

I also had a few almonds and pecans I had hiding in my purse.

After work I decided that my plums were either going to go bad in the fridge or I would make the Plum Cobbler I had been so dying to make from FatFree Vegan Kitchen. Also my brother Eric was going to come over and hang out for a while and I thought he might like a break from dorm food!
I sweetened the tops of the plums with a drizzle of agave because I was worried they weren't all the sweetest plums...
Wets and dries.
True to cobbler nature, dough went on top of the fruit.
Popped it in the oven for 45 minutes and voila!
I'd never made this before so I had no idea what to expect!

Dinner
For dinner I started with a mixed salad of baby greens, tomato, cucumber, avocado, sunflower seeds, and a homemade lemon vinaigrette dressing.
I love when salads taste like food, not just plants!
For my entree I went for quick and easy: sauteed onions and a grilled piece of salt and pepper seasoned tofu. Doused in garlic chili Cholula and the meal was complete.
Dessert
Eric and I sampled the cobbler and agreed it was pretty good. If you can imagine a spectrum from pie to cake with cobbler in the middle, this definitely rates closer to the cake side of things. I would even describe it as something of an upside-down cake. With a little almond milk on the side it was totally satisfying!

Cinco de Mayo!

Workout
It's a good thing my friend Alex called early in the morning and convinced me to hit the pool for a quick 30 minute swim. I was in the process of trying to justify staying in bed until I absolutely had to get up but I'm glad I didn't!

Breakfast
I ended up having the perfect morning! I showered and dressed at the gym and came to campus with the perfect plan. My mom sent me a package a few weeks ago and inside were these gift cards to Jamba Juice and Panda Express! (someone's been reading my blog!)
I decided to grab a bowl of steel cut oats from Jamba Juice with the classic banana topping. I also topped it with some cinnamon from the coffee shop on campus.
I went with a medium drip coffee with a shot of sugar free hazelnut and soymilk.
I grabbed the campus paper and headed out to the plaza to sit in the shade by the pond.
As usual, the beggar fish came right up to the side when I set up to take my food photo.
Crooked fish!!

Snack
After my perfect morning and once I was done with class I came home and snacked on this orange.
And what goes better with oranges than Blue Moon!? I love having 21 year old room mates!
In honor of Cinco de Mayo, Savannah and I enjoyed ourselves with one of our favorite brews.

Lunch
Then we decided to further honor the spirit of this Mexican holiday by eating burritos! We grabbed our monster meals and sat at some benches by the beach. What a gorgeous day for a burrito by the beach. I made sure to save half of my burrito for later and rushed off to work.
During choir, I snacked on this chocolate chip Z bar.

Dinner
I covered a shift for a friend at work so during my little break I had the other half of my Cinco de Mayo burrito.
When I got home I was craving something sweet so I had the last scoop of some coconut vanilla ice cream topped with a little bit of raisin bran crunch and two squares of Ritter Sport Schokolade mit Hazelnüsse, I mean chocolate with hazelnuts! I fell in love with this chocolate in Germany and my mom gave me a square when they were visiting :)

Healthy Food Hunt

Snack
I decided to stay on campus after all and get some practicing in. I had this chocolate brownie Z bar and don't worry, it's unwrapped and I kept it far away from the piano while I was eating it!

Lunch
After I got a good sesh in I decided to go on a hunt for a restaurant on campus that was still open and offered something healthy. I ended up going with Panda Express and Jamba Juice. At Panda I went with steamed veggies and the Eggplant Tofu which was nice and spicy.
At jamba I got the five fruit frenzy which is blueberries, strawberries, banana, peach, and mango.
Not too shabby!
During opera rehearsal one of the girls in the chorus gave out lollipops!
Our rehearsals are 4 hours long so a double snack is almost necessary to keep going. I had this raspberry fruit strip and the rest of my nuts.

Dinner
For dinner I went to Shabbos! Out of respect I didn't use my camera to take any photos but there was all kinds of delicious salads, soup and couscous!
I came home for a little dessert: blueberry pecan granola.
It may be the weekend but for this food playing girl, the work don't stop! I have a voice lesson Monday morning at 11 and a big surprise for the evening!!

Lunch With Alex and Aaron

Lunch
My buddies Alex and Aaron invited me to eat lunch with them after class. Woohoo! For lunch I packed up some of last night's Quinoa Vegetable Paella whose recipe came from Fatfree Vegan Kitchen. I snagged some salt and pepper for free from the Corner Store on campus while we heated up our lunches.
I also grabbed a Pomegranate Paradise from Jamba Juice using the gift card my mommy gave me for Valentine's Day. It was perfect!
All together now!
There's Alex! He was very proud of his homemade eggplant parmesan with multicolored pasta. It looked at smelled really good.
There's me!
There's the boys! Aaron plays cello, Alex plays viola, and I'm the soprano. We are quite the musical group.
Eating Kiwis with the skin just like an apple is so satisfying for some reason! It tasted sweeter to me.
Savannah and I have a date to make the most amazing Oatmeal Cookies we can come up with later tonight! I am sooo looking forward to it!
